Black Bean Beetroot Patties

Black Bean Beetroot Patties

Ingredients

120 g Tinned Beetroot

400 g  Tinned Black Beans Rinsed and drained

2 TBSP Pine Nuts

1 Egg lightly whisked

2 Slices of GF Bread made into bread crumbs 

1 Red Onion Grated

1 Large Garlic Clove Crushed

1 tsp Paprika

1 tsp Mixed Herbs

1/2 tsp ground cumin

1/2 tsp ground coriander

EVOO

Method​ 
In a food processor blitz the beetroot and black beans


Transfer into a large mixing bowl and mix in the rest of the ingredientsWith wet hands or gloves on measure 1/4 cup of mixture and mould into patties (they will be quite soft but don't worry)

Place patties into the freezer for 30 minutes. Preheat oven to 180 degrees ceclius

Heat some EVOO in a large frypan. Place the patties into the pan and allow to cook for around 2-3 minutes or until browned.

Carefully flip the patties (emphasis on carefully as they are quite fragile) and cook on the other side for around 2-3 minutes.

Wrap the patties in aluminium foil and bake in the oven for around 10-15 minutes (this will help to dry out patties a little and cook them through)

How I like to serve this - I either put the patties in a burger with salad (which is super yummy) or I break the patty up and toss it through a salad.
