Heat some EVOO in a medium sized fry pan. Use some paper towl to carefully make sure the pan is well greased.
Whisk the two eggs in a small bowl, until frothy.
Pour egg into the fry pan and twirl the pan to make sure egg is evenly distributed. Allow to cook for 1-2 minutes and then carefully flip. Cook for a further 1-2 minutes and then remove from the heat. Use wrap like any other regular wheat/corn wrap and fill with your favourite ingredients.
