Ingredients
1/4 Teaspoon Thyme
1/4 Teaspoon Chives
1 Tbsp Brown Sugar Syrup (Instructions Below)
1 Tbsp Garlic Infused Olive Oil
1/4 Teaspoon Sumac
8 Dutch Carrots
Pinch of Salt flakes
1/4 Cup Pine Nuts
Method
Brown Sugar Syrup
Mix 1 Tbsp of Brown sugar in 2 Tbsp of water on the stove top until the brown sugar is dissolved.

Carrots
Preheat the oven to 180 degrees Celsius
Cook the carrots in the microwave according to your microwave for around 3 minutes under the hard vegetables setting
Mix the Thyme, chives, brown sugar syrup, oil and sumac in a small bowl and toss the carrots in the dressing.
Place the Carrots on a baking tray and cover with the remaining dressing
Bake in the oven and cook for 8 minutes
While these are cooking toast the pine nuts on the stovetop until nice and golden
Combine the carrots and pine nuts and serve. This is nice both hot or cold
