Chewy Caramel Clusters

Ingredients
5 Medjool Dates pitted
2 Cups sea salt popcorn
1/3 cup crunch peanut paste
150 g Vegan Chocolate
Method
Cover the dates in boiling water and stand for at least 15 minutes
In a blender mix the dates and peanut butter with 1/4 cup of the date water to make the caramel sauce
In a large bowl mix the popcorn with the caramel until evenly coated
Using a teaspoon scoop out eveny sized popcorn clusters and place into a parchment paper lined container and place in the fridge to harden
Once set (around 30 minutes) melt the chocolate and dip the clusters in to coat
Place clusters back into the fridge and allow chocolate to set before enjoying
