Garlic Prawns with Chilli & Spaghetti
Gluten Free | Low FODMAP
Serves 2 - 1 serve is LF
Ingredients
1 tsp salted butter
100g Dried Gluten Free Pasta
250g prawns raw (deveined and cleaned)
1 TBSP Garlic Infused Olive Oil
1 tsp mixed herbs
1 small standard red chilli, seeds removed and finely chopped
1 cup of loosely packed rocket
2 TBSP flaked Pecorino Cheese
Salt and Pepper to season
Method
Boil water and add 1/2 tsp of salt and the mixed herbs. Cook pasta in salted and herbed water as per packet instructions.
Heat butter in a medium frypan. Add in the prawns, 1/2 TBSP garlic infused olive oil, chilli and salt and pepper and cook until prawns are golden. Remove from heat.
When pasta is cooked, strain it and add into the frypan with the pecorino and rocket. Toss all of the ingredients together until the cheese has melted slightly.
Divide the mixture between two bowl, drizzle with remaining olive oil and enjoy!!!
