Low FODMAP Fish Fingers
Low FODMAP | Nut Free | Dairy Free
Serves 2
Ingredients

2 medium fillets of white fish I used flat head 

1/4 Cup Low FODMAP Flour (I used Lo-fo Pantry)

25g Rice Crispi Breadcrumbs (I used Orgran)

1 Egg

1 tsp Mixed Herbs 

Salt and Pepper 

Spray Olive Oil 

Spring Onions (dark green part) to serve 

Mayonnaise (whole egg) 

Method​

Mix the flour, herbs and salt & pepper in a small bowl 

Pour the Breadcrumbs into a separate bowl 

In a third bowl whisk the egg 

Chop the fish fillets into bite sized pieces. Pat dry with paper towel. 

Firstly coat fish in flour mixture, dust off extra and place into the egg and then into the crumb. Coat well. Repeat for all of the pieces. 

Spray the fish with a tiny bit of spray olive oil and spray the air fryer tray. Place fish into the air fryer at 180C for roughly 10-15 minutes or until the fish is golden on the outside and cooked on the inside. Serve with the onions and mayo and enjoy!
