Low FODMAP Muesli Bars
Low FODMAP | Vegetarian | Dairy Free | Vegan
Serves roughly 6, 1 serves is Low FODMAP

15 g Sunflower Seeds 

60 g Walnuts 

20 g Pepitas 

1/2 Cup Rolled Oats 

1 TBSP Maple Syrup 

1/4 Cup Peanut Butter (crunchy)


Preheat oven to 120 degrees C

In a high speed food processor or blender crush up the sunflower seeds, walnuts, pepitas and 1/4 cup of oats. 

Pour mixture into a small bowl and stir through the peanut butter (may need to melt slightly if not runny enough) and maple syrup. Fold in the remaining oats. 

Press the mixture into a prelined bread tin. You can change this depending on how thick you want the bars. For a thinner bar try a brownie tin (remember this will vary cooking time)

Bake the muesli bars in the oven for 20 minutes and carefully remove. Cut into 6 even sized bars and bake for another 30 minutes or until the bars are lightly golden. Remove from oven and allow to cool in tin before removing and placing in an airtight container.
