Air Fried Rice Paper Rolls

Air Fried Rice Paper Rolls 

Serves 1

4 flat brown rice paper rolls (you can use white here too)

2/3 cup slaw (1/4 cup shredded red cabbage, 1/4 cup shredded kale, 1carrot grated) 

1/3 cup shredded chicken (remove for vegetarian and vegan options) replace with tofu - preparation instructions can be found here 

1/4 cup finely chopped spring onion (dark green part only)


Dipping Sauce

2-3 TBSP GF Soy Sauce (Tamari)

1 tsp finely chopped chilli

Soften the rice paper sheets in bowl with warm water. Place a quarter of the chicken, spring onions and slaw onto the rice paper sheet and roll up.

Repeat process until all rice paper rolls are made.

Lightly spray the base of an air fryer basket with oil, place in the rice paper rolls, lightly spray with oil. Cook at 180C for 8 minutes or until rolls are crispy. You may need to flip rolls half way through. 

Serve with dipping sauce (make this by combining soy sauce and chilli)
