Apple Crumble for 1




I love a good apple crumble!! I have been making it for YEARS and always took on the role of desserts when we had guests over so that I could make it! While the traditional crumble I've made is delicious, it does make a lot and for those living in a small household, it can be too much! There is nothing worse than getting sick of a dessert because it keeps staring at you when you open the fridge. SO, I decided to make a single serve one, that can be easily whipped up and is vegan!!! Apple Crumble for 1
Dairy Free | Vegan | Vegetarian
Ingredients
1 pink lady apple
1/2 tsp ground cinnamon
1/4 tsp ground ginger
t tsp water
1/4 cup Rolled Oats
1 TBSP Crunch Peanut Butter
1/4 cup chopped walnuts
1 tsp brown sugar
Favourite vegan yogurt to serve
Method
Preheat oven to 180 degrees celcius
Remove core from apple and chop apple into equal sized small cubes. Place into a microwavable safe dish and cover with cinnamon, ginger and water. Toss.
Cook apple in microwave at 50% for roughly 6 minutes, tossing every few. Cook apple until tender.
While apple is cooking, place remaining ingredients into a small bowl. Using fingers rub together the ingredients to form a crumble (this is a little messy so remove rings... I learnt the hard way)
Once apples are cooked place into an oven proof ramekin. Top with crumble, dust with a little extra cinnamon and bake in the oven for approximately 20 minutes or until crumble has toasted. TIP place ramekin on a baking tray to make the removal MUCH easier.
Allow to cool slightly, top with your favourite yogurt and enjoy!! This is delicious as a dessert but can also make an incredible warm breakfast!
