Gingerbread People

Gingerbread People
Gluten Free | Vegetarian | Dairy Free


2 Cups of Gluten-free flour sifted plus extra for dusting 

1 Teaspoon of GP Baking Powder 

1/2 Teaspoon Bicarbonate Soda

2 Teaspoon of Cinnamon 

3-4 Teaspoon on Ginger Spice

1 Pinch of Salt 

1 medium egg

130 g of Vegan Butter (I used Nuttelex) 

1/4 Cup Golden Syrup 

1/2 Cup Brown Sugar 


Egg white from one egg 

1 cup of Icing Sugar (make sure it’s GF)

Food colouring (this is optional)


Preheat the oven to 180 degrees Celsius fan forced. 

Beat the butter in a bowl with the brown sugar for 4-5 minutes or until light and creamy 

Add the Golden Syrup and the Egg and combine (don’t worry if the mixture looks a bit separated here)

Sift all of the dry ingredients together in a small bowl and then slowly add this into the wet ingredients 

Once the dough is all combined refrigerate for around 1-2 hours. 

Remove the dough from fridge and knead on a floured surface. 

Roll out the dough and cut out the gingerbread man.

Bake in the oven for around 12 minutes, give the biscuits a little longer if needed until they are nicely browned.

Remove from the oven and let cool on a rack 


Beat the egg white until frothy

Gradually add in the icing sugar until the icing has firm peaks

Colour the icing your choice 

Use a piping bag to decorate your gingerbread men however you would like
