Granola Bark

Granola Bark
Gluten Free | Dairy Free | Vegan | Vegetarian

1/2 cup Pistachio 

1/2 cup Raw Sunflower Seeds 

1/2 cup Raw Almonds 

1/2 Cup Raw Walnuts 

1/4 Raw Pepitas

2 TBSP Rice Malt Syrup 

1/2 tsp Ground Cinnamon 

1/4 tsp Ground Ginger 

1 Cup GF Oats 

2 TBSP Shredded Coconut 

1/5 Mixed Fruit (I used Medjool dates, dried figs, dried cranberries, dried apricots 

1 block of your favourite chocolate 

Please note that this recipe makes a bit more granola then needed for the bark. Store leftovers in an airtight container and enjoy with your favourite yogurt!

For the granola - 

Preheat oven to 120 Degree C 
Roughly chop the pistachio, sunflower seeds, almonds, walnuts and pepitas 
In a large bowl mix the chopped seeds/nuts, honey, oats, cinnamon and ginger 
Lay mixture on a line baking tray and bake in the oven for 25-30 minutes.Give the granola a stir for 15 minutes. If granola is golden by the 30 minutes remove from the oven and allow to cool 
Transfer granola into a large bowl and stir in the coconut and fruit 

For the bark -
Melt your favourite chocolate in the microwave or over the stove top 
Pour the chocolate evenly into a baking tray line with baking paper 
Sprinkle the granola over the melted chocolate so that there is a think layer of granola all over 
Place bark into the fridge to allow the chocolate to harden and then break into pieces and enjoy
