Haloumi, Apple and Radish Salad
Gluten Free | Vegetarian
Ingredients
2 TBSP Apple Cider Vinegar
1 TBSP EVOO
1/4 tsp Chilli Paste (Sambal)
1 Cup of Rocket
50g of Haloumi
1/2 Medium Sized Watermelon radish (you can use normal radish if preferred)
1 Pink Lady Apple
Squeeze of Lemon Juice
1/4 Cup Pine Nuts Toasted
Method
Slice the Haloumi as fine as possible. Heat a frypan, and cook the haloumi until browned on both sides. Once cooked place on a plate lined with paper towel
Chop the Apple into small chopstick shaped pieces and squeeze over the lemon juice to prevent browning
Finely slice the Radish into circles and then quarter.
Combine the Vinegar, EVOO and Chilli to make the dressing
Toss the Rocket, Radish, Apple and Haloumi with the pine nuts and drizzle the dressing over the salad immediately before serving.
