Mango Sauce

I'm a massive fan of freezing fruit in my fridge that may have gotten a bit too ripe or too soft to eat. This is another great option however to use up mango, it goes so beautifully with yogurt, fruit and muesli. I paired mine with my grain free muesli!

Mango Sauce
Gluten Free | Vegan | Vegetarian | Dairy Free

Ingredients

1 whole mango (the riper the better)

1/2 tsp ground cinnamon 

1/2 tsp ground ginger

Method
 

Slice the cheeks off of the mango making sure to avoid the seed. Slice off the additional mango flesh from around the seek. Remove the skin from the flesh 

In a blender, blitz the mango flesh until a smooth puree is formed 

Pour the mango through a fine sieve - this step is really important to catch any of the fury bits that came off the seed and will make you're sauce stringy 

Pour the strained mango into a small saucepan and heat slowly 

Add in the cinnamon and ginger into the mango and mix to combine 

Bring to the boil and then remove from the heat. Pour into a glass jug and allow to cool 

Serve this sauce the fruit, vegan yogurt and muesli as seen in the picture
