Mixed Berry Slice
Ingredients
Base:
140g of GF Vegan chocolate biscuits (I used @munchmueslicookies)
3 tbsp of Pure Cashew Butter
Centre:
1/2 cup of dried cranberries
200g of Glace Cherries (check packet to make sure they’re GF and Vegan)
1/2 cup of desiccated coconut
Top:
Favourite chocolate (I used dark)
Fun thinks to decorate (I used Gogi Berries, Cranberries and Coconut)
Method
In a food processor break up the biscuits until they are a fine crumb
Gradually add in the butter until a dough-like consistency is formed.
Press into a baking paper lined tin (I used a loaf tin)
Place in fridge while making centre
To make centre just put cherries, cranberries and coconut in the food processor and blitz till chopped and combined
Place onto base in the tin
Melt choc and pour over the top
Decorate with whatever you please
Set in fridge for like 1 hour and then cut into small cubes and store in fridge.
