Pumpkin Spiced 'Nice' Cream
I had been seeing a lot of pumpkin related recipes when I wrote this recipe.It inspired me to create my own nice cream version. This is SUPER refreshing and can be enjoyed straight away as more of a smoothie/thick shake or can be frozen for a more ‘ice cream’ consistency.
Pumpkin Spiced Nice Cream
Gluten Free | Dairy Free | Vegetarian | Vegan
1/2 cup of frozen roasted pumpkin (the roasted part is key as it makes this super sweet)
1/2 cup of frozen ripe bananas
1/8-1/4 cup of rice malt syrup (this will change with your sweetness preference)
Pumpkin spice to taste - I did about 3/4-1 teaspoon (combination of cinnamon, ginger, nutmeg and cloves)
1 cup of plant based yogurt (I used natural coconut yogurt)
Plant Based Milk (this is just used to help thin out the mixture if desired)
Pecans roughly chopped up to top ice-cream
Blend all ingredients together in a food processor or high speed blender. Add extra milk if needed to thin out mixture. Blitz until the desired consistency is reached.
Pour into a glass and serve / pour into a container and freeze for 30 minutes then top with the pecans.
