Stuffed Pumpkin

Ingredients
Handful of spinach
Crumbled Feta
Toasted Pinenuts
1 Egg
Small Butternut Squash / Pumpkin
Method
Preheat oven to 150 degrees Celsius
Place pumpkin on a baking tray lined with baking paper and cook for 15-20 minutes (time will really depend on size of pumpkin)
Cut the top off of the pumpkin (keep this) and scoop out the inner flesh. place the spinach, feta and egg in a medium bowl, mix and then add into the pumpkin
Place the top of the pumpkin back on and bake for around 10-12 minutes. Remove from oven, top with pine nuts and serve!
