Easy Tomato Salsa
Gluten Free | Dairy Free | Vegan | Vegetarian | Nut Free
Ingredients
EVOO
1 brown onion finely sliced
2 medium tomatoes diced
1 tsp Cinnamon
1 tsp Garlic Salt
1 tsp Harissa
1.5 tsp Italian Herbs
1 tsp Sriarcha
Salt to taste
1 TBSP Brown Sugar
1 TBSP Lime Juice
Method
Heat some EVOO in a small saucepan over medium heat.
Add in the onion and cook until tender.
Add in the tomatoes and mix frequently for around 2-3 minutes.
Add in the rest of the ingredients and mix to combine. Allow the flavours to develop for around 5 minutes on low heat while you continue to mix the salsa. Taste and then add in extra seasoning if needed. Enjoy!
What to serve this with -
The options are endless, but my favourite meal is to layer a whole wheat flat bread, with a layer of the salsa, then some guacamole, finely sliced red onion, shredded roast chicken and then parsley. I also like to add a dollop of greek yogurt and a wedge of lime.
