Vegan Crunchy Caramel Slice

Ingredients
Base
1 Cup Gluten Free Cornflakes
3 TBSP Peanut Paste
1 tsp Rice Malt Syrup (or honey if you aren't wanting to make this vegan)
Filling
8 Medjool Dates
2 TBSP Almond Butter
Top
Vegan Dark chocolate of choice (I used Loving Earth's Dark Chocolate)
Method
Combine the Base ingredients together in a bowl until all
combined. Press this mixture into a pre-lined loaf tin. Place in the freezer to set for 30 minutes. Place the dates in a heat proof jug with enough boiling water to cover them and allow to sit while the base is setting.
Remove the dates from the water (BUT KEEP THIS DATE WATER) and place dates and almond butter into a food processor and blend until a smooth paste has formed. You may need to use some of the date water to help thin out the mixture. Do this gradually as you don't want the mixture to be runny
Place mixture on top of the set base and place back into the freezer for another 20 minutes to set.
Heat the dark chocolate in the microwave or on the stove top until melted. Pour this over the mixture and place back into the freezer for another 20 minutes to set. Serve!!
