Ingredients
Base
1/3 cup Oats
1/3 Cup Walnuts roughly chopped
2 TBSP Maple Syrup
2 TBSP Almond Meal
3 tsp Peanut Butter
Filling
8 Medjool Dates (pitted)
1/4 cup Almond Butter
2 TBSP GF Corn Flakes
Top
1 block vegan chocolate
Method
Preheat oven to 120 degree celsius
Combine oats, walnuts, almond meal, maple syrup and melted peanut butter. Press into a pre-lined loaf tin and bake for 10 minutes
Meanwhile make the filling by covering dates in boiling water for 10 minutes and then drain (keep the date water)
In a food processor mix the soaked dates, almond butter and 1/5 tsp of the date water until the mixture is smooth. Stir in cornflakes.
Once base is cooked, cool and then place filling into it. Place into fridge while you make the icing.
Melt the chocolate in the microwave and your over the slice
Place into the freezer for the chocolate to set.
Cut into bite sized pieces and store in freezer enjoy!
