Vegetable and Beef Curry
Gluten Free | Dairy Free
Ingredients
1/2 cup of scallions finely chopped or 1 small brown onion finely sliced
1-2 tbsp of Gluten Free Flour
Half of a butter nut pumpkin cubed
500 g of Chuck/Gravy Beef
1 tin of chickpeas
1-2 Tbsp of Massaman Curry Paste (I like to use the curry shots) check it’s GF
1-2 tins of diced tomatoes
1 GF Chicken Stock Cube dissolved in approx 500mL hot water
Addition of any veggies you like, my favourites include zucchini, cauliflower, mushrooms, just make sure they’re covered with liquid.
Method
Heat a little oil in a large saucepan and cook down the onions or scallions until they are soft.
Cube up beef and then put in a container with plain GF flour and a pinch of salt and then shake container till the meat is covered in flour
Brown off the beef with the onion in the pan
Add curry paste to the pot and mix to coat the beef
Add in the tinned tomatoes and stir
Add in the stock
Add pumpkin, veggies of choice, chickpeas and add any extra water to cover all of the ingredients.
Allow the mixture to come to a boil and then simmer till the vegetables are soft and the liquid has reduced
Enjoy! I served mine up with some brown rice.
