Vegetarian Fried Rice

Vegetarian Fried Rice
Gluten Free | Dairy Free | Nut Free | Vegetarian
Serves 4-6
Method
Marinate the tofu in 1/4 cup soy sauce and 1 TBSP EVOO. Toss to ensure all of the tofu is covered (if it isn't add a little water until tofu is submerged). Allow tofu to marinate for approximately 20 minutes. Drain Tofu. 
Heat 1/2 TBSP of the Oil in a large fry pan and cook the tofu so that it is golden on all sides. Remove tofu from pan and set aside. 
In a medium bowl whisk the eggs and the spring onion until all combined. Heat the remainder of the oil in the fry pan. 
Pour the egg mixture into the pan and allow to cook for 1 minute before using a spoon to roughly scramble the eggs. Once the eggs are cooked through remove from the pan.
Cook the frozen peas in the pan until warmed through and then add in the chilli and sweet corn. Add the tofu and egg back into the pan with the brown rice. 
Add as little or as much soy sauce to taste and serve. 
Ingredients
1 block of firm tofu (300g) 
4 Eggs
1-2 Cups Cooked Brown Rice (I used the microwave kind)
1-2 Cobbs worth of sweet corn kernels 
1/4 cup finely chopped spring onion 
1 large chilli (mild kind) finely sliced
1/2 cup soy sauce GF
2 TBSP EVOO
