Stuffed Zucchini Boats
Gluten Free | Vegetarian | Nut Free
Ingredients
Zucchini (amount depends on how much mince you have)
EVOO
Salt
Leftover vegetarian Mince, Ratatouille or any other sauce you
have leftover (the thicker the consistency of the sauce the better)
Grated Cheese (I used cheddar)
Italian Herbs
Method
Preheat the oven to 180 degrees Celsius and prepare a baking tray line with baking paper
Slice the zucchini in half and then scoop out the middle of the vegetable. Make sure to leave enough zucchini flesh so that the sides are strong enough to hold the sauce
Brush the zucchini with EVOO and sprinkle with a little salt. Place onto a lined baking tray and cook for 10-15 minutes or until zucchini has softened.
While the zucchini is in the oven, roughly chop the zucchini flesh which you scooped out of the boats and add in the mince. Heat this on the stove top until zucchini flesh has softened.
Once zucchinis are cooking and mince is heated through, fill zucchini with the mince and top with some cheese and a sprinkle of Italian herbs. Place the zucchinis back into the oven under the grill to melt the cheese and then serve.
